There are many reasons to create your own sourdough starter. Leavening your bread with a wild starter is a slower process. The good news is that the longer your bread is left to rise with a sourdough starter, the better the flavor!
Finding great ways to use discard sourdough starter alleviates some of that feeling that I am wasting starter. And, since I feed my starter in the morning, there is no better time to make pancakes.
